Proses pembuatan bigos dimulai dengan merebus daging babi dan sosis dalam kaldu daging. Setelah itu, kubis dicincang dan ditumis dengan bawang, kemudian dimasukkan ke dalam kaldu bersama dengan daging dan sosis. Jamur dan rempah-rempah kemudian ditambahkan untuk memberikan rasa yang kaya dan aroma yang harum.
 
Berasal dari Polandia, hidangan ini juga menjadi tradisional di wilayah yang luas [[Persemakmuran Polandia–Lithuania]].
Bigos biasanya dimasak dalam waktu yang lama, bahkan hingga beberapa hari, sehingga rasa dan aroma semakin meresap.
