Sejak pendirian Negara [[Israel]] pada 1948, dan sebagian besar sejak akhir 1970an, "[[masakan fusion]] Israel" telah berkembang. Masakan tersebut mengadaptasi unsur-unsur dari beberapa gaya Yahudi, menggunakan produk-produk agribudaya baru, dan memasukkan hidangan Timur Tengah lainnya.
