Susunan kalimat

Halo, saya menemui dua hal dalam artikel yang saya kurang pahami, sebagai berikut:

1. Teknik, parag I, baris 3 Memanggang cheesecake dengan bain marie akan menghasilkan kue yang berwarna coklat pada permukaannya. Sementara itu, penggunaan bain marie membantu menghasilkan cheesecake dengan permukaan yang berwarna terang dan basah

>> Terdapat pertentangan antara kalimat pertama dan kalimat kedua terhadap penggunaan bain marie. Apakah fakta yang benar ada pada kalimat pertama atau pada kalimat kedua?

2. Prancis, parag. I, baris 4 Tinggi dari cheesecake ini umumnya adalah 2.5 hingga 4 sentimeter sedangkan diameternya lebih kecil dari cheesecake di Amerika yaitu sekitar 3 sampai 3 sentimeter.
